The house
A working brasserie, not a stage set
Brasserie 701 sits on the ground floor of Hôtel Place d'Armes, facing the square and Notre-Dame. Cream drapery, birdcage chandeliers, a zinc bar — the architecture of a Parisian house, used from breakfast through last call.
The kitchen is French technique against Quebec and Maritime product: lobster and scallops from the Magdalen Islands, vegetables from Lanaudière and Saint-Thomas, Rougié foie gras from Montérégie. Executive chef Cédric St-Pierre; sous-chef Soufiane Hanbali.
